Harvest
Agave plants are carefully harvested by skilled jimadores, removing the sharp leaves to extract the piñas, the heart of the agave.
Cooking
The piñas are slowly cooked in state of the art european autoclaves, converting the agave’s natural starches into fermentable sugars.
Milling
Cooked piñas are crushed to extract the sweet agave juice, or “mosto,” which is rich in sugars needed for fermentation.
Fermentation
The agave juice is fermented in large tanks, where yeast transforms the sugars into alcohol, producing a fragrant, low-alcohol liquid called “mosto muerto.”
Distillation
The mosto muerto is double distilled to purify the tequila, separating alcohol from impurities and resulting in a clear, potent spirit ready for aging or bottling.
Aging
Depending on the desired tequila type, the spirit may be aged in stainless steel vats and oak barrels, gaining complexity, color and smoothness over time.
Double Filtered
Our tequila undergoes a double filtration process using activated charcoal and fine filters to achieve unparalleled purity and smoothness.
